Prawns Aglio Olio

This is the FIRST time I am cooking pasta this way 🙂 Usually, I’ll just use the bottled spagetti sauce.. put it in a pot, add some mushrooms and meatballs .. BUT this time.. I decided to cook it differently…

Found the receipe on noobcook ( My insipiration for cooking!) I modified the recipe slightly as I like my food to have some vege. I also added some shredded chicken as they were left over from previous night’s dinner.

Ingredients(Serves 2)

A handfull of spaghetti
1-2 tbsp olive oil
2 tbsp chopped garlic
12 large prawns/shrimps (shells & veins removed)
1 tbsp of dried basil (use fresh basil if possible, it will be more aromatic)
1 Cup spinach leaves
Red Pepper flakes (optional)
Shredded chicken (prepared beforehand, optional)
Sea salt

Directions

1. Add some vegetable oil and salt to a pot of water, and boil the spaghetti till al dente (according to the instructions on the package). Drain & set aside.
2. In a saucepan (medium flame), heat olive oil and stir fry chopped garlic, basil and chilli flakes till they are infused with the oil.
3. Add the prawns and stir fry till they are cooked.
4. Add in spinach and shredded chicken. Toss in the pasta and stir evenly.
5. Season with salt (about 1/2 tsp and add more if needed) and stir well. You can garnish with corriander leaves ( I used) or parsley flakes, grated cheese and garlic bits before serving.
